Personal recipe:
Fresh Okanagan Vegan Iced 'Smoothies'

As you might or might not know, at this very moment, your Simply Delicious newsletter provider is very pregnant. As in, I'm expecting my baby to be born within a month.

Pregnancy does interesting things with the female body when it comes to food cravings. Lately, I've been obsessing over the McDonald's 'real' fruit smoothies. Terrible. Expensive. Not supporting local. In general, not really for me. So I figured, I can do this better. And I did. 

I started chopping and freezing local fruits. And okay, sometimes I just grabbed them pre chopped fruits from the freezer. Because, you know, pregnancy, right? I can be a little lazy. Smirk. I started throwing them in my fancy Ninja blender with a couple of iced cubes and orange juice. Juicing it for about 2-3 minutes, until it became a semi-smooth substance. 

Result? Ten times better than those fastfood real fruit smoothies. Healthy, cheaper, fast & delicious. 
For 2 large smoothies:
  • 1 cup of liquid (This one has tropical juice)
  • 1.5/2 cups of frozen fruit (This one has blueberries and mango)
  • 4-6 iced cubes
Throw the frozen fruit and iced cubes in the blender first. Then add the liquid. Turn on the blender on low and leave it on until the substance becomes smooth (about 2-3 minutes).
Is it not smoothing out? Turn the blender off, press down the chopped up frozen fruits/iced cubes with a spoon, then turn the blender back on (after closing the lid obviously). 
After it's done, I scoop the substance in a glass, as it's almost like sorbet ice cream. Since I don't use straws, I spoon up the smoothie first, until the substance melts a little, then I drink it. 
Really simple, healthy and yummy. Fun to do with kids as well!
